Short Description
A culinary workshop to rediscover ancient doughs by preparing the typical "tabisca prizzese" (a type of pizza) or the traditional "gidata," the historic stuffed Sicanian focaccia.
Full Description
An experience dedicated to the secrets of traditional baking in the Sicani Mountains, guided by a local expert. This workshop will allow you to try your hand at preparing a unique ancient dough according to tradition, giving life to the famous "tabisca prizzese" (the characteristic elongated local pizza) or the "gidata" from Prizzi, a historic focaccia made from durum wheat flour traditionally stuffed with wild chard, potatoes and onion.
During the time required for the dough to rise, you won't be sitting idle: together with your local advisor, you will prepare other traditional local dishes selected according to the season. You will discover the importance of the hinterland's culinary traditions, before enjoying all your freshly baked creations.
- Hands-on cooking class to prepare local pizza (tabisca) or the traditional gidata prizzese
- Focus on ancient grain doughs and traditional stretching and stuffing techniques
- Final tasting of everything prepared, accompanied by other local products.
